You will need - 185g of butter
1/3 cup soft brown sugar
2 free range eggs
1/3 cup golden syrup
3/4 cup self raising flour
1/3 cup plain flour
2 tsp ground ginger
1 tsp ground cinnamon
1/2 cup raw grated potato (I used a King Edward)
Cream the butter and sugar with an electric mix until light and fluffy.
Beat in the eggs and the syrup.
Stir in all the dried ingredients and the grated potato.
Allow to cool before making up some Ganache Topping and pouring over, topping off with a sprinkling of crumbled flake.
